Carolina Reaper is a variety of chilli pepper (Capsicum chinense) bred by American grower Ed Currie of the PuckerButt Pepper Company in South Carolina. In 2013 it was listed in the Guinness Book of Records as the world's hottest chilli with an average hotness of 1 641 183 Scoville units (SHU). In 2023 it was surpassed by a new variety, Pepper X, also bred by Ed Currie.
Appearance and taste: The Carolina Reaper is bright red, with a bumpy surface and a distinctive 'tail'. The flavour is described as sweet and fruity, with hints of cinnamon and chocolate, but quickly becoming extremely spicy.
Cultivation: This variety requires temperatures of at least 18 °C to grow. It is recommended to grow the plants in 30 litre pots, which limits growth and speeds up fruiting.
Uses: Due to its extreme pungency, Carolina Reaper is mainly used to make hot sauces, salsas and condiments. Caution is required when handling this pepper; it is recommended to wear gloves and avoid contact with eyes or mucous membranes.
