The Lemon Drop pepper (Capsicum baccatum), also known as Ají Limón, is a vibrant chili variety originating from Peru. It’s celebrated for its bright yellow pods, zesty citrus flavor, and moderate to high heat, making it a favorite among chili enthusiasts.
Appearance and Size: Lemon Drop plants are vigorous and well-branched, reaching heights of up to 90 cm. The peppers are thin-walled, conical, and measure approximately 5–7 cm in length. They mature from green to a striking lemon-yellow hue.
Heat Level and Flavor: These peppers offer a sharp, citrusy heat, with Scoville Heat Units (SHU) ranging from 30,000 to 50,000. Their bright, lemony flavor adds a refreshing kick to various dishes.
Cultivation: Lemon Drop peppers thrive in full sun and well-drained soil. They have a longer maturation period, typically around 100 days from transplanting. Starting seeds indoors 8–10 weeks before the last frost and maintaining soil temperatures between 28–30°C can enhance germination. Due to some seed dormancy, germination may take up to three weeks or more.
Culinary Uses: The Lemon Drop’s unique citrus flavor and moderate heat make it versatile in the kitchen. It’s excellent in salsas, hot sauces, and marinades, where its citrusy heat complements fish, chicken, and vegetable dishes.
Maintain a temperature of 24 - 28 °C for germination - germinates in 7 - 14 days
